This wine is
deep purplish-red in colour. It has aromas of fresh black fruit,
cherries, black pepper and chocolate. A fullstructured wine on the
palate, it has very smooth tannins. This is a fresh wine with hints
of black plums, tobacco and a gentle toasty touch which combines
with the fruit for the finish.
The grapes, of our own production, were selected and harvested by
hand. Prior to fermentation, a cold maceration took place over
eight days. This was followed by fermentation with selected yeasts
in stainless steel tanks at 27ºC. 40% of this wine was then aged
for six months in French and American oak barrels.
