A fresh,
floral nose with notes of acacia flowers. On the palate it is dry
and well-balanced with lively fruit flavors.
Food Pairings:
An excellent aperitif served alongside hors d’oeuvres, or as
accompaniment to essentially all seafood dishes and fresh
vegetables.
Harvest was
conducted during the first half of September. Vinified entirely in
stainless steel to preserve the integrity of the fruit and maintain
the freshness typical of Pinot Grigio. Alcoholic fermentation took
place in temperature-controlled tanks over the course of 10-12 days
at a low temperature of 15-17°C. The wine rested in the same tanks
for 1-3 months before being filtered, fined and bottled.
